Creamy, cheesy, and comforting, these Au Gratin Potatoes are the perfect side dish for any meal.
Ingredients
3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 teaspoons salt
Pepper, to taste
2 cups 2% milk
1 cup shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 medium; local Co-op potatoes work great!)
1/2 cup chopped onion
Instructions
Preheat oven to 350°F (175°C).
In a large saucepan over low heat, melt butter. Stir in flour, salt, and pepper until smooth.
Gradually add milk, stirring constantly. Bring to a boil and cook for 2 minutes, until thickened.
Remove from heat and stir in shredded cheese until melted.
Add sliced potatoes and chopped onion; mix to coat evenly.
Transfer mixture to a greased 2-quart baking dish. Cover with foil and bake for 1 hour.
Remove foil and bake an additional 30–40 minutes, or until potatoes are tender and lightly golden on top.
Let stand a few minutes before serving.
Serving Suggestion
Sprinkle breadcrumbs on top before baking for a crunchy topping.
Add garlic or fresh herbs (thyme, rosemary) to elevate the flavor.
