Creamy, cheesy, and comforting, these Au Gratin Potatoes are the perfect side dish for any meal.

Ingredients

  • 3 tablespoons butter

  • 3 tablespoons all-purpose flour

  • 1 1/2 teaspoons salt

  • Pepper, to taste

  • 2 cups 2% milk

  • 1 cup shredded cheddar cheese

  • 5 cups thinly sliced peeled potatoes (about 6 medium; local Co-op potatoes work great!)

  • 1/2 cup chopped onion

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large saucepan over low heat, melt butter. Stir in flour, salt, and pepper until smooth.

  3. Gradually add milk, stirring constantly. Bring to a boil and cook for 2 minutes, until thickened.

  4. Remove from heat and stir in shredded cheese until melted.

  5. Add sliced potatoes and chopped onion; mix to coat evenly.

  6. Transfer mixture to a greased 2-quart baking dish. Cover with foil and bake for 1 hour.

  7. Remove foil and bake an additional 30–40 minutes, or until potatoes are tender and lightly golden on top.

  8. Let stand a few minutes before serving.

Serving Suggestion

  • Sprinkle breadcrumbs on top before baking for a crunchy topping.

  • Add garlic or fresh herbs (thyme, rosemary) to elevate the flavor.
